Ingredients

  • 4 ounces fettuccine pasta
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic minced
  • 2 chicken sausage links, sliced
  • 1 cup cherry tomatoes
  • 1/2 cup mushrooms sliced
  • 1/2 cup freshly grated Parmigiano
  • 3 ounces spinach leaves
  • salt and pepper

How To Make fettuccine with spinach, mushrooms and sausage

  • Step 1
    Cook pasta in heavily salted boiling water. Drain and reserve 1/4 cup pasta water.
  • Step 2
    Place the olive oil and butter in a saucepan. Add the garlic and cook for 1 minute. Add the sausage and cook until lightly browned
  • Step 3
    Add the mushrooms and tomatoes and cook for 4 minutes. Add the spinach and allow it to wilt. Add the pasta, Parmigiano, and reserved pasta water. Mix well.
  • Step 4
    Taste and add salt and pepper.
