This is a quick and easy dinner to make and it tastes so good, we love it in our house. My Mom would make this recipe when me and brother were growing up, if she was in a hurry, and we got our protein too! Mom would always serve this with a nice salad.

Ingredients

  • 1 lb
    fettuccine
  • 1/4 lb
    melted butter
  • 1 lb
    ricotta cheese (light or regualr)
  • 1 Tbsp
    chopped parsley
  • 1 c
    grated parmesan or romano cheese
  • ·
    salt and pepper to taste.

How to Make Fettuccine with Ricotta Cheese

Step-by-Step

  1. Cook spaghetti as directed on package, drain.
  2. Put back in warm pot.
  3. Add melted butter.
  4. Mix ricotta until smooth with a tbsp. or two of milk.
  5. Pour over hot spaghetti.
  6. Transfer to a platter
  7. Sprinkle with parsley and grated cheese.
  8. Serve right away with a nice salad.
