Now that our farmers market will be open and selling a great assortment of vegetables it is time to make this pasta and vegetable combination.

Ingredients

  • 6 oz
    fettuccine pasta
  • 1 1/4 c
    thin sliced small carrots
  • 1 1/2 c
    broccoli florets
  • 2 c
    thin sliced button or cremeni mushrooms
  • 1 c
    snow peas cut in half
  • 1/2 c
    minced scallions
  • 1 Tbsp
    grated ginger root
  • 3 clove
    garlic minced
  • 3 Tbsp
    soy sauce, low sodium
  • 1/4 c
    fresh lime juicve
  • 2 Tbsp
    honey
  • 2 Tbsp
    sesame seeds
  • 1 c
    grated asiago or parmeson cheese
  • 2 Tbsp
    fine chopped cilantro

How to Make Fettuccine and Vegetable Combo

Step-by-Step

  1. In large pot cook pasta according to package directions. drain and set aside.
  2. In medium non-stick skillet add 1/4 cup water bring to boil. add carrots, broccoli, mushrooms, pepper, reduce heat and simmer for 5 minutes til vegetables are just softened add snow peas, scallion, ginger and garlic, cook uncovered for 2 minutes until snow peas are softened.
  3. In small whisk together soy sauce, honey, juice and 4 tbsp water and pour over vegetable mixture and sprinkle with cheese and sesame seeds.
