1Add extra-virgin olive oil to 6 qt. pot. When hot, add the onion and garlic and saute over medium heat for 7-8 min until soft. Add celery and carrot and saute for 4-5 min on lower heat. Add meat & turn up the heat. Stir frequently, breaking up lumps and adding all the herbs and spices.
2When meat has cooked, add the tomato products. Cook on low heat about 30 min to get sauce to thicken. Taste and re-season as needed. You may want to add 1/4 cup freshly grated Romano cheese as the last ingredient.
3Serve over the cooked pasta you have chosen.
Accompany with the salad and bread of your choice and dinner is served.
