Ingredients

  • 1 pound ground beef
  • 1 medium onion chopped
  • 1/2 small bell pepper any color
  • 1 package taco seasoning mix
  • 8 ounces cream cheese
  • 1 can refried beans
  • 1 teaspoon minced garlic
  • 1 can enchilada sauce
  • 6 large flour tortillas
  • 1 package shredded 4 cheese mexican blend cheese
  • 1/4 cup mozzarella cheese

How To Make enchilada lasagna

  • Step 1
    Preheat oven to 375 Pour the enchilada sauce into a shallow bowl and set aside. Grease a 9x13 baking dish and also set aside.
  • Step 2
    Brown the ground beef with the onions, bell pepper, and garlic.
  • Step 3
    Drain the meat and return to pan. Add taco seasoning (follow package directions for taco seasoning mix) Add Cream Cheese and refried beans and heat until cream cheese is melted
  • Step 4
    dip 2 of the tortillas in the enchilada sauce and shake off excess. Place in the bottom of the pan.
  • Step 5
    Pour half of the meat/refried bean mixture on top followed by 1/3 of the mexican cheese blend.
  • Step 6
    Repeat step 5 ending with 2 flour tortillas dipped in enchilada sauce on top with the rest of the mexican cheese blend and the mozzarella cheese
  • Step 7
    Heat in oven uncovered for 20-25 mins or until heated through and cheese is melted
