ground beef
1 medium
onion chopped
1/2 small
bell pepper any color
1 pkg
taco seasoning mix
8 oz
cream cheese
1 can(s)
refried beans
1 tsp
minced garlic
1 can(s)
enchilada sauce
6 large
flour tortillas
1 pkg
shredded 4 cheese mexican blend cheese
1/4 c
mozzarella cheese

How to Make Enchilada Lasagna


  • 1Preheat oven to 375
    Pour the enchilada sauce into a shallow bowl and set aside. Grease a 9x13 baking dish and also set aside.
  • 2Brown the ground beef with the onions, bell pepper, and garlic.
  • 3Drain the meat and return to pan. Add taco seasoning (follow package directions for taco seasoning mix) Add Cream Cheese and refried beans and heat until cream cheese is melted
  • 4dip 2 of the tortillas in the enchilada sauce and shake off excess. Place in the bottom of the pan.
  • 5Pour half of the meat/refried bean mixture on top followed by 1/3 of the mexican cheese blend.
  • 6Repeat step 5 ending with 2 flour tortillas dipped in enchilada sauce on top with the rest of the mexican cheese blend and the mozzarella cheese
  • 7Heat in oven uncovered for 20-25 mins or until heated through and cheese is melted
