Ingredients

  • 1 lb
    ground beef
  • 1 medium
    onion chopped
  • 1/2 small
    bell pepper any color
  • 1 pkg
    taco seasoning mix
  • 8 oz
    cream cheese
  • 1 can(s)
    refried beans
  • 1 tsp
    minced garlic
  • 1 can(s)
    enchilada sauce
  • 6 large
    flour tortillas
  • 1 pkg
    shredded 4 cheese mexican blend cheese
  • 1/4 c
    mozzarella cheese

How to Make Enchilada Lasagna

Step-by-Step

  1. Preheat oven to 375
    Pour the enchilada sauce into a shallow bowl and set aside. Grease a 9x13 baking dish and also set aside.
  2. Brown the ground beef with the onions, bell pepper, and garlic.
  3. Drain the meat and return to pan. Add taco seasoning (follow package directions for taco seasoning mix) Add Cream Cheese and refried beans and heat until cream cheese is melted
  4. dip 2 of the tortillas in the enchilada sauce and shake off excess. Place in the bottom of the pan.
  5. Pour half of the meat/refried bean mixture on top followed by 1/3 of the mexican cheese blend.
  6. Repeat step 5 ending with 2 flour tortillas dipped in enchilada sauce on top with the rest of the mexican cheese blend and the mozzarella cheese
  7. Heat in oven uncovered for 20-25 mins or until heated through and cheese is melted
