This is more or less my own concoction that I've improved on over the years. It's one of my favorites, and leftovers--if there are any--do freeze well.

Ingredients

1 lb
ground chuck
1 medium
onion, diced
1 large
green pepper, diced
2 pkg
boil-in-bag rice
1 large
can stewed tomatoes or chopped tomatoes
1 tsp
chili powder
2 tsp
worcestershire sauce
1 tsp
salt
1/4 tsp
pepper
1 1/2 c
shredded cheddar or mexican blend shredded cheese

How to Make ELLEN'S TERRIFIC SPANISH RICE

Step-by-Step

  • 1In large skillet, brown the ground chuck with the onion and green pepper; drain. Open two pouches of boil-n-bag rice and empty into pan with meat mixture.
  • 2Add remaining ingredients except cheese. Fill empty tomato can with water and pour over all. Stir and mix well over medium-high heat until boiling.
  • 3Turn heat to low and simmer about 20 minutes, covered, until all liquid is absorbed and ingredients are hot. Sprinkle with cheese, cover, and cook just until cheese melts.
