ellen's terrific spanish rice

This is more or less my own concoction that I've improved on over the years. It's one of my favorites, and leftovers--if there are any--do freeze well.

Ingredients

  • 1 pound ground chuck
  • 1 medium onion, diced
  • 1 large green pepper, diced
  • 2 packages boil-in-bag rice
  • 1 large can stewed tomatoes or chopped tomatoes
  • 1 teaspoon chili powder
  • 2 teaspoons worcestershire sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups shredded cheddar or mexican blend shredded cheese

How To Make ellen's terrific spanish rice

  • Step 1
    In large skillet, brown the ground chuck with the onion and green pepper; drain. Open two pouches of boil-n-bag rice and empty into pan with meat mixture.
  • Step 2
    Add remaining ingredients except cheese. Fill empty tomato can with water and pour over all. Stir and mix well over medium-high heat until boiling.
  • Step 3
    Turn heat to low and simmer about 20 minutes, covered, until all liquid is absorbed and ingredients are hot. Sprinkle with cheese, cover, and cook just until cheese melts.
