ellen's terrific spanish rice
This is more or less my own concoction that I've improved on over the years. It's one of my favorites, and leftovers--if there are any--do freeze well.

Ingredients
- 1 pound ground chuck
- 1 medium onion, diced
- 1 large green pepper, diced
- 2 packages boil-in-bag rice
- 1 large can stewed tomatoes or chopped tomatoes
- 1 teaspoon chili powder
- 2 teaspoons worcestershire sauce
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups shredded cheddar or mexican blend shredded cheese
How To Make ellen's terrific spanish rice

Step 1In large skillet, brown the ground chuck with the onion and green pepper; drain. Open two pouches of boil-n-bag rice and empty into pan with meat mixture.

Step 2Add remaining ingredients except cheese. Fill empty tomato can with water and pour over all. Stir and mix well over medium-high heat until boiling.

Step 3Turn heat to low and simmer about 20 minutes, covered, until all liquid is absorbed and ingredients are hot. Sprinkle with cheese, cover, and cook just until cheese melts.
