When you're bored with regular macaroni & cheese, try this departure. Excellent change of pace! Also great for those meatless Fridays during Lent.

Ingredients
- 2 cups elbow macaroni
- 2 tablespoons vegetable oil
- 2 tablespoons all purpose flour
- 1 (15 oz) can tomato sauce
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups cheddar cheese, shredded
How To Make ellen's spicy mac & cheese

Step 1Cook macaroni according to directions. Drain and set aside.

Step 2Meanwhile combine oil & flour in saucepan; heat.

Step 3Add tomato sauce, onion, garlic, salt and pepper. Simmer 10 minutes.

Step 4Add 2 cups cheese and stir.

Step 5Pour into greased 1-1/2 qt. casserole along with drained macaroni; mix thoroughly. May sprinkle more cheese on top if desired. Bake uncovered in a preheated 350º oven for 30 minutes.
