I found this elbow spaghetti at an Amish market. You can get it on Amazon too.

Ingredients

  • 1 pound elbow spaghetti
  • salt
  • 4 tablespoons butter, divided
  • 1 medium onion, chopped
  • 4 cloves garlic
  • 6 ounces tomato paste
  • 1 tablespoon balsamic vinegar
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • fresh basil, for serving

How To Make elbow spaghetti with tomato, onion, and butter

  • Step 1
    Bring a pot of water to a boil and add the salt. Add the pasta and cook for about 15 minutes until the pasta is almost done. Drain over a bowl and reserve 2 cups of the pasta water.
  • Step 2
    Place 1 Tbsp butter in a saucepan. Add the onion and saute for 5 minutes.
  • Step 3
    Add the tomato paste and 1 1/2 cups of pasta water.
  • Step 4
    Add the pasta and continue to cook until the pasta is covered with the sauce.
  • Step 5
    Add the balsamic vinegar, remaining butter, and Parmesan cheese. Cook and stir for 3 more minutes. Use more of the pasta water if to dry.
  • Step 6
    Serve garnished with basil and more Parmesan.
