easy weeknight beef stroganoff

Got this one from a Scandinavian-heritaged chef I know... she never steers me wrong!

Ingredients

  • 2 pounds flat iron steak, cubed
  • 1 - medium onion, sliced
  • 10 ounces mushrooms, sliced
  • 4 tablespoons paprika, smoked
  • 3 cups water, enough to cover beef
  • 2 - knorr beef boullion cubes
  • 3 cloves garlic, minced
  • 8 ounces block cream cheese, may use 1/3 fat or fat-free if you wish
  • 8 ounces sour cream, may use light or fat-free if you wish

How To Make easy weeknight beef stroganoff

  • Step 1
    Preheat large deep skillet or dutch oven to medium-high. Put 1 - 2 tablespoons of oil to coat. Place beef, onions, garlic, and mushrooms in the skillet, then cover beef with water and add the beef boullion. Cover and simmer on low-medium heat for at least 30 minutes.
  • Step 2
    Once beef is cooked through and mushrooms and onions soft, add 1 block of cream cheese, stir, and bring back to steady simmer. Simmer UNCOVERED for another 15 - 30 minutes on low to medium heat, until sauce has reduced by half. Stir in sour cream.
  • Step 3
    Once fully incorporated and thickened, remove from heat and serve over wide egg noodles, pasta or gnocchi.
