easy spinach lasagna
This recipe I found off the back of a can of tomatoes. I of course tweeked it and made it my own. I added a bit of spaghetti sauce cause I like a saucier lasagna. I also added a can of sliced mushrooms and a can of sliced black olives. YUM!

Ingredients
- 9 - 2 in. lasagna noodles
- 1 pound ground beef
- 2 cans delmonte diced tomatoes with basil, garlic & oregano
- 2 cans whole leaf spinach
- 1 pound ricotta cheese, part-skim
- 3 cups mozzarella cheese
- 1 can spaghetti sauce (16 oz)
How To Make easy spinach lasagna

Step 1Cook pasta according to package dorecions; drain.

Step 2cook meat with tomaoes in skillet over over medium high heat, 7mins. Drain spinach well, squeezing out excess liquid; blend with ricotta cheese.

Step 3layer 3 noodles 1/2 spinach mixture, 1/3 tomatoe mixture, and 1/3 ncheese in a 9x12 baking dish. repeat ending in noodles tomatoes and cheese.

Step 4bake at 350 degrees, 30 min or untill heated thru. (Garnish with sliced green onions and serve with parmesan cheese if desired!)
