easy angel hair pasta with veggies

I love Pasta Primavera but sometimes I find it a little too plain. This combination of veggies with angel hair and good pasta sauce is MANGIA good! I make my own pasta sauce and will post it the next time I make it. You can use any pasta sauce you like or omit it and just toss the veggies and shaved cheese with the angel hair if you prefer. It is a tasty meatless yet filling meal. You can even substitute cooked spaghetti squash for the angel hair. Always serve with good garlic bread.

Ingredients

  • 1 large zucchini, cubed
  • 8 ounces sliced white mushrooms
  • 2 large shallots, quartered
  • 1 small onion, rough chop
  • 1 can sliced black olives (4-6 oz can)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika, sweet mild
  • 1 teaspoon garlic salt with parsley
  • 1/4 teaspoon black pepper
  • 4 tablespoons olive oil
  • 1 pound angel hair pasta
  • 3-4 cups favorite pasta sauce
  • - shaved 3 cheese mix of Parmesan, Romano and Asiago

How To Make easy angel hair pasta with veggies

  • Sauteeing vegetables in a pan.
    Step 1
    Chop all vegetables into big chunks. In a large skillet heat about 4 tablespoons of olive oil. Add the chopped vegetables. Sprinkle with garlic powder, onion powder, garlic salt with parsley, pepper, and paprika. Stir and fry until liquid cooks off and the vegetables are tender. Set aside.
  • Marinara heating on the stove and pasta draining in a colander.
    Step 2
    While vegetables are cooking, heat your favorite spaghetti sauce or marinara. Cook angel hair according to package directions. Drain.
  • Angel hair pasta on a plate topped with sauteed vegetables.
    Step 3
    To serve place a big scoop of cooked pasta on a plate. Top with vegetables and pour sauce over vegetables. Sprinkle with shaved cheese to taste. Enjoy!
