- 1 pound beef sirloin, boneless cut into strips
- 1/2 teaspoon white pepper
- 2 tablespoons butter
- 6 ounces mushrooms
- 6 - scallions, chopped
- 10.5 ounces beef gravy
- 2 tablespoons balsamic vinegar
- 1/3 cup sour cream

Step 1Sprinkle steak strips with half the pepper.

Step 2Melt 1 tablespoon butter in large, preferably nonstick, skillet over med-high heat.

Step 3Add sliced mushrooms, whites of scallions and remaining pepper.

Step 4Cook, stirring often, until mushrooms are tender, about 8 minutes.

Step 5Remove with slotted spoon to bowl.

Step 6Wipe skillet clean.

Step 7Add remaining butter and heat over high heat until sizzling.

Step 8Add beef strips and stir-fry about 2 minutes until browned.

Step 9Stir in gravy and vinegar.

Step 10Bring to a boil.

Step 11Remove from heat and stir in sour cream until blended.

Step 12Sprinkle with green part of scallions.
