dora's shrimp pasta

This recipe was given to me by my friend Dora. It had no name, but it was a dish we had at her house so that is why I called it "Dora's Shrimp Pasta". I lost touch with Dora years ago, but have made this recipe many times, shared it just as many times and have even made it differently. But each time I have made or shared the recipe, have thought of that day at her house when she served this dish and shared her recipe.

Ingredients For dora's shrimp pasta

  • 1 sm
    zucchini
  • 1 sm
    yellow squash
  • 1 bunch
    broccoli crowns
  • 1 sm
    onion, chopped
  • 4 clove
    garlic, chopped
  • olive oil, extra virgin
  • dozen or so grape tomatoes, sliced in half
  • 2 Tbsp
    basil, dried or fresh
  • 1
    lemon, squeezed and zested
  • 1 bottle
    italian salad dressing, bottle or mix
  • parmesan cheese
  • 1 lb
    uncooked shrimp
  • 1 can
    black olives, small can

How To Make dora's shrimp pasta

    Prepare pasta according to package directions.

    In pan, sauté onion and garlic in a little olive oil until translucent; add in zucchini, summer squash and broccoli along with a little water to steam the vegetables. When the vegetables are almost done, add in the shrimp and lemon zest and steam until the shrimp turn pink.

    Drain the pasta and vegetable mixture. Prepare the dressing if using the mix, and also add in the lemon juice and basil. Combine all the ingredients and slice tomatoes, add olives and Parmesan Cheese to taste.
