debbie's turkey noodle casserole

We had leftover holiday turkey and my husband requested something new and interesting. So I came up with this recipe. We will make this one more than once a year as it is easy week day meal to prepare with any leftover meat that is on hand.

Ingredients
- 1 cup cubed cooked Turkey or Chicken
- 1 cup sliced mushrooms
- 1 cup diced sweet onion
- 1/2 cup real butter
- 8 ounces egg noodles, cooked to the directions on the package
- 4 ounces Pimentos
- 1/2 teaspoon ground sea salt
- 1/4 teaspoon ground black pepper
- 1/3 cup white flour
- 2 cups chicken broth
- 1 cup milk
- 8 ounces shredded parmesan cheese
- 1/4 teaspoon ground cayenne pepper (optional)
How To Make debbie's turkey noodle casserole

Step 1In large skillet, sauté onions in butter until clear, add mushrooms. Saute until mushrooms are soft. Stir in flour with whisk, allowing to lightly brown. Add chicken broth and milk, continue to stir on med-high heat. After liquid and mixture have combined, add pimentos, salt, pepper, cayenne and turkey. Continue to stir with whisk until comes to mild boil. Add cheese and stir well. Add mixture to cooked noodles and mix well. Preheat oven to 350. Use veg. spray in 13x9 casserole dish. Pour casserole mixture into dish. Top with dried bread crumbs and melted butter to taste. Bake for 20 minutes…then Enjoy!
