I think this is so yummy for a fix and forget it Mexican flavor dinner. It's also cheesy which I love and I can mix it all together in the morning and it's ready about time everyone is ready to eat dinner. I serve it with Cornbread.

Ingredients
- 1 pound ground beef
- 1 - onion, chopped
- 3/4 cup water
- 1 package taco seasoning mix
- 15 ounces tomato sauce
- 1 package elbow macaroni, uncooked
- 1/2 cup green bell pepper, chopped
- 2 cups mexican blend shredded cheese or sharp cheddar cheese
- 1/2 cup sour cream
How To Make crock pot mexican casserole

Step 1In a skillet, brown ground beef and onion; drain fat. Add the water, taco seasoning, tomato sauce and sour cream; mix. Simmer for 20 minutes. Transfer to Crock-Pot. Stir in macaroni and chopped green pepper. Cover and cook on Low for 6 to 8 hours or on High 3 to 4 hours. In the last 30 minutes of cooking top with shredded cheddar cheese. Serve with Cornbread if desired.
