1Whisk together eggs and parmesan cheese in a large bowl.
2Cut bacon into 1 inch strips. Heat skillet and cook bacon until some fat has rendered and almost done.
Add smashed garlic cloves and stir and cook until bacon is crisp.Reserve half bacon set aside. Add fresh spinach and cook til it has wilted.
3Cook pasta, before drianing reserve 1 cup of pasta water. Whisking continously add some of the hot pasta water to the egg mixture. Toss the hot pasta, with the egg mixture, and then the bacon/garlic/spinach mixture adding more hot pasta water to coat everything in a creamy sauce.
Serve with grated parmesan and remaining bacon.
