This is a recipe, that I created with what I had and thought would be quite flavorful. I wanted something not heavy to serve with my Tailgate Meatballs.The family absolutely loved it. Was super delicious, if I do say so myself. You could add some cooked chicken or shrimp to this for a more complete meal. Enjoy!

Ingredients

  • 3/4 cup uncooked orzo pasta
  • 2 tablespoons butter
  • 2- 3 teaspoons jarred minced garlic or a few fresh cloves, minced
  • 1/3 cup fine chopped onion
  • 2 slices - mushrooms, diced - optional
  • 2 thin slices prosciutto - diced - optional
  • 2 1/4 teaspoons flour
  • 1 cup milk
  • 1/2 cup shredded parmesan cheese
  • 1 cup fresh spinach, chopped
  • salt - & pepper to taste
  • a few pinch ground nutmeg

How To Make ~ creamy parmesan orzo ~ cassies

  • Step 1
    Cook pasta according to directions, about 9 minutes once water boils, drain.
  • Step 2
    In a med to large skillet, melt butter over med heat. Stir in onion, garlic and mushrooms if using and proscuitto. Cook for 2 - 3 minutes, stirring often.
  • Step 3
    Stir in the flour and cook for another minute, making sure not to scorch.
  • Step 4
    Whisk in the milk, slowly and bring to a simmer. Continue cooking until becomes bubbly and thickens.
  • Step 5
    Remove from burner and stir in the Parmesan cheese, until melted. Stir in the spinach and orzo and toss to coat. Return to burner, add nutmeg, salt & pepper to taste, cook only long enough to heat pasta and wilt the spinach.
  • Step 6
    Serve immediately. Delicious!
