creamy fettucine w/ cayenne pepper sauce

I had extra peppers on hand and wondered what to do w/ them, when i remembered a recipe I've made before, but hadn't in a long time. So I dug it out and made it. It's still as delicious as the last time! Creamy and spicy!!

Ingredients

  • 12 ounces uncooked ronzoni garden delight fettuccine pasta
  • 2 large red bell peppers, julienned
  • 2 tablespoons minced garlic
  • 3/4 teaspoon cayenne pepper
  • 1 cup low-fat sour cream
  • 3/4 cup low-sodium chicken broth
  • 3/4 cup grated parmesan cheese.
  • - salt & pepper to taste

How To Make creamy fettucine w/ cayenne pepper sauce

  • Step 1
    In lg pot of boiling water, cook fettuccine until al dente, drain. Spray a lg skillet w/ cooking spray, preferably made w/ olive oil. Set over medium heat and saute peppers, garlic and cayenne pepper for about 5 min. Stir in sour cream and broth. Bring to a boil, reduce heat and simmer 5 mins. Remove from heat and stir in parmesan cheese. Toss pasta w/ sauce, season w/ salt & pepper.
