chicken breasts, cut into bite size pieces
  • kosher salt
  • freshly ground black pepper
  • 1 Tbsp

  • 2 Tbsp
    butter
  • 1/2 md
    yellow onion, chopped
  • 2 clove
    garlic
  • 1 c
    uncooked orzo
  • 2 1/2 c

  • 2 c
    chopped broccoli florets
  • 2/3 c
    grated Parmesan cheese
  • 1/2 c
    heavy cream
  • chopped fresh rosemary or thyme

How To Make creamy chicken and orzo

  • 1
Sprinkle the chicken generously with salt and pepper. Heat the olive oil and melt the butter in a large skillet over medium heat. Add the chicken and cook until golden brown on both sides. Transfer the chicken to a plate and cover to keep warm.
  • 2
Add the onion and cook over medium heat until soft. Reduce the heat to low and add the garlic, cooking for 1 minute while stirring.
  • 3
Add the orzo and chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and cook until the orzo is tender.
  • 4
Meanwhile, add the broccoli to a microwaveable bowl with a 1/4 cup of water. Cover with plastic wrap and microwave on high for 2 1/2 minutes.
  • 5
Stir the Parmesan cheese, heavy cream, and cooked broccoli into the orzo, over very low heat. Cook for a couple of minutes to melt the Parmesan cheese. Garnish with chopped fresh herbs.
