- 2 large chicken breasts, cut into bite size pieces
- kosher salt
- freshly ground black pepper
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1/2 medium yellow onion, chopped
- 2 cloves garlic
- 1 cup uncooked orzo
- 2 1/2 cups low-sodium chicken broth
- 2 cups chopped broccoli florets
- 2/3 cup grated Parmesan cheese
- 1/2 cup heavy cream
- chopped fresh rosemary or thyme
How To Make creamy chicken and orzo

Step 1Sprinkle the chicken generously with salt and pepper. Heat the olive oil and melt the butter in a large skillet over medium heat. Add the chicken and cook until golden brown on both sides. Transfer the chicken to a plate and cover to keep warm.

Step 2Add the onion and cook over medium heat until soft. Reduce the heat to low and add the garlic, cooking for 1 minute while stirring.

Step 3Add the orzo and chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and cook until the orzo is tender.

Step 4Meanwhile, add the broccoli to a microwaveable bowl with a 1/4 cup of water. Cover with plastic wrap and microwave on high for 2 1/2 minutes.

Step 5Stir the Parmesan cheese, heavy cream, and cooked broccoli into the orzo, over very low heat. Cook for a couple of minutes to melt the Parmesan cheese. Garnish with chopped fresh herbs.
