My mother made this for us growing up and I have made it for my family. It has passed the test of time. Great comfort food, very easy and yummy.

ground beef
8 oz
macaroni, elbow
15 oz
kidney beans, canned
15 oz
corn, canned
10 3/4 oz
tomato soup
8 oz
cheddar cheese, shredded
1 Tbsp
chili powder

How to Make Cowboy Casserole


  • 1Brown and drain gound beef. Boil and drain macaroni.
  • 2Mix corn (drained) with kidney beans (not drained), tomato soup, half of the cheese and chili pepper.
  • 3Add in the ground beef and macaroni, mixing well.
  • 4Bake in a 13x9 baking dish at 350F for 25 minutes. After 25 minutes, sprinkle remianing cheese on top and bake an additional 5 minutes.
