Ingredients

  • 3 c
    macaroni, whole wheat
  • 2 c
    boiling water
  • 1 lb
    cottage cheese
  • 1/2
    red bell pepper, diced
  • 1/2
    green bell pepper, diced
  • 1 c
    yellow squash, thinly sliced
  • 1 c
    zucchini, sliced
  • 1
    onion, sliced
  • 1/2 tsp
    garlic powder
  • 1 tsp
    dried oregano
  • 1/2 tsp
    dried basil
  • 2 Tbsp
    parsley, chopped
  • 6 oz
    tomato paste
  • 16 oz
    tomatoes, canned with juice and quartered
  • 3 Tbsp
    parmesan cheese, grated

How to Make Confetti Macaroni Bake

Step-by-Step

  1. Layer evenly in baking dish: macaroni, water, cottage cheese, peppers, yellow squash, zucchini and onion.
  2. Sprinkle with seasonings and then layer the tomato paste, tomatoes and juice.
  3. Sprinkle with cheese and bake in a preheated 350 oven, uncovered, 1 1/2 hours.
