macaroni, whole wheat

boiling water

cottage cheese
red bell pepper, diced
green bell pepper, diced
1 c
yellow squash, thinly sliced
1 c
zucchini, sliced
onion, sliced
1/2 tsp
garlic powder
1 tsp
dried oregano
1/2 tsp
dried basil
2 Tbsp
parsley, chopped
6 oz
tomato paste
16 oz
tomatoes, canned with juice and quartered
3 Tbsp
parmesan cheese, grated

How to Make Confetti Macaroni Bake


  • 1Layer evenly in baking dish: macaroni, water, cottage cheese, peppers, yellow squash, zucchini and onion.
  • 2Sprinkle with seasonings and then layer the tomato paste, tomatoes and juice.
  • 3Sprinkle with cheese and bake in a preheated 350 oven, uncovered, 1 1/2 hours.
