This is the ultimate comforting casserole. Creamy and cheesy and oh so yummy.

Ingredients

  • 1 - 16 oz box ronzoni garden delight penne pasta
  • 6 slices reduced-sodium bacon.
  • 1 cup panko crumbs
  • 1/4 cup melted butter
  • 1 teaspoon dried parsley
  • 3 tablespoons olive oil
  • 3 teaspoons minced garlic
  • 3 - finely chopped shallots
  • 2 tablespoons all purpose flour
  • 4 cups light cream
  • 1 teaspoon dried thyme
  • 1 cup reduced-fat, shredded monterey jack cheese
  • 2 cups reduced-fat, shredded sharp cheddar cheese.
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How To Make comforting creamy penne casserole.

  • Step 1
    Heat oven to 350 Spray a 9 x 13" casserole dish w/ cooking spray. Set aside. Cook pasta as directed, drain. Set aside. Place bacon in lg skillet, over med-high heat. Cook until just crisp, drain on paper towels. Reserve drippings in small bowl. In another bowl, crumble bacon, mix in panko crumbs, butter and parsley, set aside. Heat oil in skillet, over medium heat. Stir in garlic and shallots, cook, stirring for 5 min. Stir in bacon drippings and flour. Cook, stirring for 1 min. Whisk in light cream and thyme. Continue cooking until reduced by 1/3. Add both cheeses. Cook, stirring until cheese melts. Season w/ salt and pepper. Stir in pasta. Transfer pasta mix to casserole dish. Sprinkle w/ bread crumb mix. Bake 25 min, or until bubbly.
