clayton macaroni and cheese

This new macaroni and cheese recipe I created is based on a Clayton sandwich. It's great with a side of mixed salad and cornbread.

Ingredients

  • 1 pound dry elbow macaroni
  • 4 teaspoons margarine, divided
  • 1/2 cup sour cream
  • 6 tablespoons cream cheese, softened
  • 1 cup French dressing, divided
  • 8 ounces monterey jack cheese, shredded and divided
  • 1 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 bag frozen (all-white meat) popcorn chicken
  • 4 banana pepper, sliced
  • 3/4 cup all purpose flour
  • 2 cups fat free milk
  • 1 cup crushed salad croutons

How To Make clayton macaroni and cheese

  • Step 1
    Bring a large pot of lightly salted water to a boil, add macaroni and cook for 8 minutes.
  • Step 2
    Drain macaroni, transfer to a large bowl with 2 tablespoons of margarine, and toss to coat. Whisk together the sour cream, 1/2 cup French dressing and cream cheese on a small bowl.
  • Step 3
    Add to the macaroni and mix well. Stir in 2 cups shredded monterey jack cheese and the Parmesan cheese.
  • Step 4
    Heat olive oil in a large, deep skillet over medium-low heat. Add popcorn chicken and saute for 5 minutes. Stir in sliced banana peppers. Remove from heat and set aside.
  • Step 5
    Preheat oven to 375 degrees F.
  • Step 6
    Return the skillet to the heat and melt remaining 2 tablespoons margarine over medium-low heat.
  • Step 7
    Whisk in the flour, stir until the mixture becomes a roux and light golden brown in color, about 5 minutes. Gradually whisk the milk into the flour mixture and bring to a simmer over medium heat.
  • Step 8
    Cook and stir until the mixture is smooth and thickened. Stir in remaining French dressing. Remove the sauce from the heat and let cool for 5 minutes.
  • Step 9
    Add chicken/banana pepper mixture into a greased 9x13 inch baking pan. Mix well.
  • Step 10
    Pour the sauce over the macaroni mixture, stirring well. Transfer to the prepared baking pan and sprinkle with remaining monterey jack cheese. Top with crushed croutons.
  • Step 11
    Bake in preheated oven for 30 minutes until the cheeses are bubbly.
