classic penne alla arrabiata

This is a classic Italian pasta dish. I got the recipe years ago from my friends mom, who was originally from Italy, so you know it's the real deal. Serve w/ homemade garlic bread and a glass of chianti, and you'll feel like you are in italy.

Ingredients

  • 1 pound penne pasta, i used ronzoni smart taste
  • 2 tablespoons olive oil, extra virgin
  • 1 cup red onion, thinly sliced
  • 2 teaspoons minced garlic
  • 6 ounces genoa salami, cubed
  • 1/2 teaspoon red pepper flakes
  • 2 - 14.5 oz cans diced tomatoes, w/ juice
  • 1 tablespoon tomato paste
  • 1 tablespoon light brown sugar
  • 1 tablespoon balsamic vinegar
  • - salt and pepper to taste
  • 1/3 cup fresh basil, torn into pieces
  • 1/4 cup grated fresh parmesan cheese.

How To Make classic penne alla arrabiata

  • Step 1
    Cook pasta as directed, reserving 1/4 cup cooking water, drain. Heat oil in lg skillet over med-high heat. Add onion and saute for 5 mins.
  • Step 2
    Add garlic, salami and red pepper flakes, saute 7 mins or until fragrant. Add tomatoes w/ their juice, tomato paste, brown sugar, and vinegar.
  • Step 3
    Stir well. Reduce heat to medium, simmer for 15 mins. Season w/ salt & pepper. Transfer pasta to lg serving bowl, spoon sauce over pasta, toss to coat. Sprinkle w/ bail and parmesan cheese.
