classic covington pasta w/seafood

Great Chef from a local restaurant gave me this recipe years ago...always been a hit ~ adds come spice to your life!

Ingredients

  • 8 ounces jar salsa, homemade or storebought, as spicy as you'd like
  • 1/2 medium green & yellow or yellow & red pepper, diced
  • 1/2 small onion, diced
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound sea scallops, dried & cut in half if very large
  • 1/4 cup chardonnay
  • 1 small block feta cheese
  • 2 tablespoons butter, room temperature
  • 2 tablespoons olive oil, extra virgin
  • 1/2 pound angel hair pasta [or more you choose]

How To Make classic covington pasta w/seafood

  • Step 1
    Cook Angel Hair Pasta as directed; while thats happening saute green & yellow pepper [or colors of your choice] & small diced onion in butter & olive oil til softened & remove from pan. Add wine; shrimp and scallops, saute a few minutes then add salsa and cook together til seafood is done...put the peppers and onions back in. Pour all over cooked pasta and top w/crumbled block of feta cheese. I am keen to garlic so I always add 1 small clove garlic crushed with the peppers and onions...
