Great Chef from a local restaurant gave me this recipe years ago...always been a hit ~ adds come spice to your life!

8 oz
jar salsa, homemade or storebought, as spicy as you'd like
1/2 medium
green & yellow or yellow & red pepper, diced
1/2 small
onion, diced
1/2 lb
shrimp, peeled and deveined
1/2 lb
sea scallops, dried & cut in half if very large
1/4 c
1 small
block feta cheese
2 Tbsp
butter, room temperature
2 Tbsp
olive oil, extra virgin
1/2 lb
angel hair pasta [or more you choose]

How to Make Classic Covington Pasta w/Seafood


  • 1Cook Angel Hair Pasta as directed; while thats happening saute green & yellow pepper [or colors of your choice] & small diced onion in butter & olive oil til softened & remove from pan. Add wine; shrimp and scallops, saute a few minutes then add salsa and cook together til seafood is done...put the peppers and onions back in. Pour all over cooked pasta and top w/crumbled block of feta cheese. I am keen to garlic so I always add 1 small clove garlic crushed with the peppers and onions...
  • 2;Serve w/salad & Texas Toast for a Fast Easy Dinner.
