Ingredients
- 8 ounces elbow spaghetti or any pasta you want
- salt
- 1/4 cup hulled pumpkin seeds
- 2 cups fresh cilantro
- 2 cloves garlic
- 1 tablespoon lemon juice
- 1/2 small jalapeno, seeded
- 1/2 teaspoon salt
- 1/2 cup olive oil
- fresh grated Parmesan, for serving
How To Make cilantro and pumpkin seed pesto pasta

Step 1Bring a pot of salted water to a boil and add the pasta.

Step 2Toast the pumpkin seeds in a dry pan. Add to the food processor. Add the cilantro, garlic, lemon juice, jalapeno, and salt to the process. Process while drizzling in the olive oil,

Step 3Drain the pasta and place it back in the pan over medium heat, and add the cilantro pesto and mix well

Step 4Serve with Parmesan sprinkled on top.
