I found this recipe on the web, but I changed it so much that it became a new recipe! If you love chili and love beef stroganoff, you will love this recipe! It is so quick to make, and it's tasty and hearty.

Thick and full of flavor, this is a chili twist on a stroganoff. It has all the flavors you expect from chili but in half the time. No waiting for the chili to simmer for several hours. This easy, budget-friendly meal comes together in under 30 minutes. Serving over egg noodles makes this a hearty dinner

Ingredients

  • 1 pound 90% lean ground beef
  • 1 clove garlic, minced
  • 4 stalks green onions, chopped (reserve about 1/4 cup to garnish)
  • 1 medium green pepper, chopped
  • 1/2 teaspoon Kosher salt
  • 1 tablespoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 cup salsa, mild
  • 1 can chopped green chilies (4 oz)
  • 8 ounces wide egg noodles
  • 1/2 cup sour cream, to garnish
  • 1/2 cup shredded munster or cheddar cheese, to garnish
  • 1 - beefsteak tomato, sliced thin, to garnish

How To Make chili stroganoff

  • Brown ground beef with garlic, green onions, green peppers, and seasonings.
    Step 1
    In a large nonstick skillet, cook and stir ground beef until browned with garlic, green onions, green peppers and all seasonings.
  • Stir in salsa and green chilies; simmer.
    Step 2
    Stir in salsa and green chilies. Simmer for 10 minutes.
  • Boil egg noodles.
    Step 3
    Meanwhile, cook egg noodles in boiling salted water until al dente. Drain and set aside.
  • Top with sour cream, shredded cheese, green onions, and tomatoes on the side.
    Step 4
    Serve meat mixture over noodles with sour cream and shredded cheese on top and garnish with sliced tomatoes and green onions.
