Ingredients

  • 8 ounces pasta of choice
  • 2 cups asparagus trimmed and cut into 2 inch pieces
  • 1 1/2 cups cooked chicken chopped
  • 1/2 red onion sliced
  • 4 tablespoons peanut oil
  • 2 tablespoons each lemon juice and fresh tarragon chopped
  • 1 tablespoon dijon mustard
  • 1 tablespoon coarse whole grain mustard
  • 1/2 cup crumbled gorgonzola cheese
  • salt and pepper to taste
  • fresh parsley for garnish

How To Make chicken tarragon pasta with asparagus

  • Step 1
    Cook the pasta in boiling salted water. Add the asparagus the last 3 minutes of cooking the pasta. Drain
  • Step 2
    Place the pasta in a large bowl. Add the red onion and cooked chicken.
  • Step 3
    Whisk the oil, lemon juice, tarragon, and mustards. Pour over the pasta mixture. Stir in the Gorgonzola cheese.
  • Step 4
    Taste and season with salt and pepper. Garnish with parsley
