Ingredients
- 8 ounces pasta of choice
- 2 cups asparagus trimmed and cut into 2 inch pieces
- 1 1/2 cups cooked chicken chopped
- 1/2 red onion sliced
- 4 tablespoons peanut oil
- 2 tablespoons each lemon juice and fresh tarragon chopped
- 1 tablespoon dijon mustard
- 1 tablespoon coarse whole grain mustard
- 1/2 cup crumbled gorgonzola cheese
- salt and pepper to taste
- fresh parsley for garnish
How To Make chicken tarragon pasta with asparagus

Step 1Cook the pasta in boiling salted water. Add the asparagus the last 3 minutes of cooking the pasta. Drain

Step 2Place the pasta in a large bowl. Add the red onion and cooked chicken.

Step 3Whisk the oil, lemon juice, tarragon, and mustards. Pour over the pasta mixture. Stir in the Gorgonzola cheese.

Step 4Taste and season with salt and pepper. Garnish with parsley
