Ingredients
- 2 tablespoons olive oil
- 1/2 pound boneless skinless chicken breast
- 8 ounces hot or mild sausage links, casing removed.
- 1 medium onion, chopped
- 2 sticks celery, chopped
- 1/2 - green bell pepper, diced
- 1/2 - red bell pepper, diced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon oregano, dried
- 1/4 teaspoon paprika
- 1/2 teaspoon salt
- 1/4-1/2 teaspoon cayenne pepper (optional)
- 1/2 teaspoon cajun seasoning (optional)
- 1 cup rigatoni pasta, cooked
- 1 can 14 oz diced tomatoes with juice
- 1 can 16 oz tomato sauce
- 8 ounces medium shrimp peeled and cut in half
- 2 tablespoons fresh chopped parsley
How To Make chicken, shrimp and sausage cajun pasta

Step 1Cook pasta per directions on box, set aside.

Step 2In large Dutch oven, brown chicken and sausage in hot oil. Remove and drain.

Step 3Add onion, green and red peppers, celery, bell pepper, thyme, oregano, paprika, salt, cayenne pepper and Cajun seasoning to the pan. Cook and stir for about 5 minutes until onions and peppers are tender.

Step 4Add pasta, tomatoes with juice and tomato sauce, chicken and sausage into the Dutch oven. Bring to a boil.

Step 5Stir in shrimp and parsley. Cover and cook for 5-8 minutes longer or until shrimp curl and turn pink. Serve.
