This is a spicy dish. If you do not tolerate heat, adjust spices or omit cayenne and Cajun seasonings and use mild sausage.

Ingredients

  • 2 tablespoons olive oil
  • 1/2 pound boneless skinless chicken breast
  • 8 ounces hot or mild sausage links, casing removed.
  • 1 medium onion, chopped
  • 2 sticks celery, chopped
  • 1/2 - green bell pepper, diced
  • 1/2 - red bell pepper, diced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon oregano, dried
  • 1/4 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4-1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon cajun seasoning (optional)
  • 1 cup rigatoni pasta, cooked
  • 1 can 14 oz diced tomatoes with juice
  • 1 can 16 oz tomato sauce
  • 8 ounces medium shrimp peeled and cut in half
  • 2 tablespoons fresh chopped parsley

How To Make chicken, shrimp and sausage cajun pasta

  • Step 1
    Cook pasta per directions on box, set aside.
  • Step 2
    In large Dutch oven, brown chicken and sausage in hot oil. Remove and drain.
  • Step 3
    Add onion, green and red peppers, celery, bell pepper, thyme, oregano, paprika, salt, cayenne pepper and Cajun seasoning to the pan. Cook and stir for about 5 minutes until onions and peppers are tender.
  • Step 4
    Add pasta, tomatoes with juice and tomato sauce, chicken and sausage into the Dutch oven. Bring to a boil.
  • Step 5
    Stir in shrimp and parsley. Cover and cook for 5-8 minutes longer or until shrimp curl and turn pink. Serve.
