chicken and tortellini florentine

I had some things hanging around that needed to be used, and so I came up with this. Both Hubby and I enjoyed it immensely, so I thought I should get it down in a recipe.

Ingredients

  • 1/2 rotisserie chicken, deboned, cubed
  • 1/2 package brown mushrooms
  • 1 medium onion,chopped
  • 1 package mushroom tortellini
  • 1 package fresh spinach
  • 1 jar pasta sauce, I used chunky

How To Make chicken and tortellini florentine

  • Step 1
    Boil tortellini according to package directions. I used chicken broth, but you can use water too.
  • Step 2
    In a large skillet, soften the onion in a bit of olive oil.
  • Step 3
    Add sliced mushrooms. Cook for about 3 minutes.
  • Step 4
    Add cubed chicken. Stir well to warm the chicken.
  • Step 5
    Drain and add tortellini.
  • Step 6
    Add pasta sauce and mix well. Briing to nearly boiling.
  • Step 7
    Add spinach and cover until wilted down. You might need to do it in 2 batches.
  • Step 8
    Serve and enjoy!
