chicken and tortellini florentine
I had some things hanging around that needed to be used, and so I came up with this. Both Hubby and I enjoyed it immensely, so I thought I should get it down in a recipe.

Ingredients
- 1/2 rotisserie chicken, deboned, cubed
- 1/2 package brown mushrooms
- 1 medium onion,chopped
- 1 package mushroom tortellini
- 1 package fresh spinach
- 1 jar pasta sauce, I used chunky
How To Make chicken and tortellini florentine

Step 1Boil tortellini according to package directions. I used chicken broth, but you can use water too.

Step 2In a large skillet, soften the onion in a bit of olive oil.

Step 3Add sliced mushrooms. Cook for about 3 minutes.

Step 4Add cubed chicken. Stir well to warm the chicken.

Step 5Drain and add tortellini.

Step 6Add pasta sauce and mix well. Briing to nearly boiling.

Step 7Add spinach and cover until wilted down. You might need to do it in 2 batches.

Step 8Serve and enjoy!
