Your family will have big smiles on their faces when they sit down to enjoy this cheesy taco skillet. It's all the flavor of tacos, but with pasta rather than corn taco shells. Your favorite Tex-Mex flavors in one easy family-friendly casserole. Don't like ground sausage? Substitute with ground beef as Chrissy suggests. This recipe is very forgiving.

Ingredients

  • 1/2 pound ground sausage, any flavor works (can use ground beef)
  • 1 package taco seasoning mix
  • 2 cups beef broth
  • 1 1/2 cups small pasta (wagon wheel or small shells)
  • 1 can corn, drained (15.25 oz)
  • 1 can cannellini beans, rinsed and drained (15 oz)
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1/2 cup black olives, chopped or sliced
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • OPTIONAL TOPPINGS
  • sour cream

While this sits, the cheese melts into the skillet making everything nice and cheesy. We still, though, added a bit more cheese to the top, because you can never have too much cheese.
  • Cooking ground sausage in a skillet.
    Step 1
    Cook sausage until done in a large deep skillet.
  • Taco seasoning, beef broth, pasta, corn, beans, olives, and tomatoes in skillet.

    Reduce heat to medium-low, cover, and cook for 10 minutes.

    Stir in sour cream.
  • Cheese sprinkled on top.

    Top with cheese. Let stand 10 minutes. Pasta should soak up any leftover liquid in this time. Serve with any additional toppings of your choosing. Skies the limit!
