Ingredients

  • 8 ounces fettuccine
  • salt
  • 1 tablespoon vegetable oil
  • 1 1/2 cups mushrooms sliced
  • 3 green onions diced
  • 4 cloves garlic minced
  • 1 large bag baby spinach chopped
  • 1/4 cup water
  • 15 ounces ricotta cheese
  • 1/2 cup heavy cream
  • 2/3 cup parmesan cheese grated
  • 1 large egg
  • 1/2 teaspoon each salt black pepper and nutmeg
  • 1 1/2 cups shredded swiss cheese

How To Make cheesy spinach fettuccine

  • Step 1
    Cook the Fettuccine in boiling salted water until al dente. Drain and set aside.
  • Step 2
    In a large skillet add the oil and cook the mushrooms, green onions, and garlic for about 5 minutes. Add the spinach and water and cook until spinach is wilted. Remove from heat.
  • Step 3
    Mix the ricotta cheese, heavy cream, Parmesan cheese, egg, salt , pepper, and nutmeg together. Add the mushroom mixture and the fettuccine. Mix well and place in a sprayed baking pan.
  • Step 4
    Bake at 350 degrees for 30 minutes. Top with the Swiss cheese and bake another 5 minutes until cheese is melted.
