Ingredients
- 8 ounces fettuccine
- salt
- 1 tablespoon vegetable oil
- 1 1/2 cups mushrooms sliced
- 3 green onions diced
- 4 cloves garlic minced
- 1 large bag baby spinach chopped
- 1/4 cup water
- 15 ounces ricotta cheese
- 1/2 cup heavy cream
- 2/3 cup parmesan cheese grated
- 1 large egg
- 1/2 teaspoon each salt black pepper and nutmeg
- 1 1/2 cups shredded swiss cheese
How To Make cheesy spinach fettuccine

Step 1Cook the Fettuccine in boiling salted water until al dente. Drain and set aside.

Step 2In a large skillet add the oil and cook the mushrooms, green onions, and garlic for about 5 minutes. Add the spinach and water and cook until spinach is wilted. Remove from heat.

Step 3Mix the ricotta cheese, heavy cream, Parmesan cheese, egg, salt , pepper, and nutmeg together. Add the mushroom mixture and the fettuccine. Mix well and place in a sprayed baking pan.

Step 4Bake at 350 degrees for 30 minutes. Top with the Swiss cheese and bake another 5 minutes until cheese is melted.
