Ingredients
- 1 pound rotini pasta, cooked
- 2-3 cups cooked, chopped chicken breast
- 1 package (10 ounces) frozen spinach, thawed and squeezed dry
- 2 tablespoons extra virgin olive oil
- 2 tablespoons butter
- 1/2 onion, finely chopped
- 2-3 garlic cloves, minced
- 1 (15 ounces) container ricotta cheese
- 1-1/2 cup chicken stock
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1-1/2 cup shredded mozzarella cheese
- 1 cup grated parmesan cheese
How To Make cheesy chicken and rotini bake

Step 1In a large skillet over medium heat, melt the butter with the extra virgin olive oil and saute the onion and garlic. Slowly add the chicken stock and continue stirring.

Step 2Turn the heat to low and add spinach and Ricotta cheese and stir. Season with salt and pepper, stir and turn off heat. Add the pasta and chicken to the skillet. Toss well and then pour the mixture into a 9 X 13 inch baking dish.

Step 3Top with the cheeses and bake at 350 degrees for 15 to 20 minutes. Do not overcook.
