Ingredients
- 8 ounces penne or any small tube pasta
- 1/4 cup olive oil
- 4 cloves garlic minced
- 1/2 head of cauliflower cut into florets
- 2 cups chicken stock
- 1 cup frozen peas
- 4 scallions chopped
- salt and pepper
- 1/3 cup heavy cream
- 1 cup finely grated parmesan cheese
- 2 tablespoons butter
How To Make cheesy cauliflower and pea pasta

Step 1Cook the pasta in a pot of boiling water. Drain and add a little oil to the pasta and set aside.

Step 2Add the remaining olive oil to the pot. Add the onion and saute until softened. Add the garlic and cook 30 seconds. Add the cauliflower and chicken stock. Bring to a boil. Let the stock reduce by half and then add the scallions and peas. Stir in the pasta.

Step 3Add the heavy cream taste and adjust for salt and pepper. Add the Parmesan cheese and cook until melted. Stir in the butter
