My husband has had this recipe for years and the first time he made it for me I was hooked. He is not certain where he acquired it but I always ask him to make it for me on my birthday. I love this dish and am so glad he makes this for me. I know I am spoiled when he cooks this for me.

Ingredients

CHEESE FILLING

8 oz
fresh mushrooms
1 Tbsp
butter
2 c
mozzarella cheese, shredded (divided)
1 c
cottage cheese, small curd
1/2 c
parmesan cheese, grated

eggs
1/4 c
parsley flakes1/2
1/2 tsp
salt

How to Make Cheese Manicotti

Step-by-Step

  • 1On stove top cook noodles to package directions.
  • 2Sauté mushrooms on stove top in butter. In large bowl whisk eggs and add mushrooms. To eggs mix one cup mozzarella cheese, cottage cheese, parmesan cheese, salt and parsley.
  • 3In two quart baking dish put 1/2 cup of spaghetti sauce. Fill each of the 8 shells with cheese filling mixture placing each in baking dish careful to not stack. Pour remaining spaghetti sauce over the top of noodles. Sprinkle with remaining 1 cup of mozzarella cheese.
  • 4Bake at 350° for 30 minutes.
