cheese manicotti
My husband has had this recipe for years and the first time he made it for me I was hooked. He is not certain where he acquired it but I always ask him to make it for me on my birthday. I love this dish and am so glad he makes this for me. I know I am spoiled when he cooks this for me.

Ingredients
- CHEESE FILLING
- 8 ounces fresh mushrooms
- 1 tablespoon butter
- 2 cups mozzarella cheese, shredded (divided)
- 1 cup cottage cheese, small curd
- 1/2 cup parmesan cheese, grated
- 2 - eggs
- 1/4 cup parsley flakes1/2
- 1/2 teaspoon salt
- OTHER ITEMS
- 8 - manicotti shells
- 16 ounces spaghetti sauce
How To Make cheese manicotti

Step 1On stove top cook noodles to package directions.

Step 2Sauté mushrooms on stove top in butter. In large bowl whisk eggs and add mushrooms. To eggs mix one cup mozzarella cheese, cottage cheese, parmesan cheese, salt and parsley.

Step 3In two quart baking dish put 1/2 cup of spaghetti sauce. Fill each of the 8 shells with cheese filling mixture placing each in baking dish careful to not stack. Pour remaining spaghetti sauce over the top of noodles. Sprinkle with remaining 1 cup of mozzarella cheese.

Step 4Bake at 350° for 30 minutes.
