My husband has had this recipe for years and the first time he made it for me I was hooked. He is not certain where he acquired it but I always ask him to make it for me on my birthday. I love this dish and am so glad he makes this for me. I know I am spoiled when he cooks this for me.

Ingredients For cheese manicotti

  • CHEESE FILLING
  • 8 oz
    fresh mushrooms
  • 1 Tbsp
    butter
  • 2 c
    mozzarella cheese, shredded (divided)
  • 1 c
    cottage cheese, small curd
  • 1/2 c
    parmesan cheese, grated
  • 2
    eggs
  • 1/4 c
    parsley flakes1/2
  • 1/2 tsp
    salt
  • OTHER ITEMS
  • 8
    manicotti shells
  • 16 oz
    spaghetti sauce

How To Make cheese manicotti

    On stove top cook noodles to package directions.

    Sauté mushrooms on stove top in butter. In large bowl whisk eggs and add mushrooms. To eggs mix one cup mozzarella cheese, cottage cheese, parmesan cheese, salt and parsley.

    In two quart baking dish put 1/2 cup of spaghetti sauce. Fill each of the 8 shells with cheese filling mixture placing each in baking dish careful to not stack. Pour remaining spaghetti sauce over the top of noodles. Sprinkle with remaining 1 cup of mozzarella cheese.

    Bake at 350° for 30 minutes.
