  • 1 pound cavatappi pasta, cooked in salted water and drained
  • TOMATILLO PESTO
  • 8 tomatillos, husked and rough chop
  • 1 bunch cilantro, rough chop
  • 3 cloves garlic
  • 1/4 cup pine nuts
  • 1 jalapeno, seeded and chopped
  • 1 medium lime, juiced
  • olive oil
  • salt
  • pepper

How To Make cavatappi with tomatillo pesto

  • Step 1
    Place all the ingredients for the pesto except oil in a food processor. Process pouring in the oil until its well mixed and smoothish.
  • Step 2
    Taste and adjust for salt and pepper.
  • Step 3
    Mix hot pasta with the pesto and serve immediately.
