Carmelized Onions & Mushrooms Pasta
2 Tbspolive oil
3 largeonions, sliced very thin (i always use vidalia but use what you like)
·salt and pepper, to taste
1/2 cwhite wine, dry
1/2 cparsley, finely chopped
1/2 cheavy cream
1 lbpasta of choice, prepared to package directions
4 ozmini portabella mushrooms, fresh and sliced (any fresh mushroom will work)
How to Make Carmelized Onions & Mushrooms Pasta
- In a large skillet, heat olive oil and butter over medium heat. Add the onions, turn the heat to low and cook, stirring occasionally, for 30 minutes.
- Stir in mushrooms and cook for another 15-30 minutes until onions are golden brown.
- Add salt and pepper. Stir in the wine and raise heat to high; simmer until most of the wine has evaporated.
- Add the heavy cream; simmer and stir for a few minutes until thickened. Stir in parsley remove from heat. Serve over prepared pasta of choice.
