carmelized onions & mushrooms pasta
If you love sauteed onions and mushrooms, you'll love this! Since recently becoming a vegetarian, I am discovering so many ways to serve pasta. This is one the whole family loves!

Ingredients
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 large onions, sliced very thin (i always use vidalia but use what you like)
- - salt and pepper, to taste
- 1/2 cup white wine, dry
- 1/2 cup parsley, finely chopped
- 1/2 cup heavy cream
- 1 pound pasta of choice, prepared to package directions
- 4 ounces mini portabella mushrooms, fresh and sliced (any fresh mushroom will work)
How To Make carmelized onions & mushrooms pasta

Step 1In a large skillet, heat olive oil and butter over medium heat. Add the onions, turn the heat to low and cook, stirring occasionally, for 30 minutes.

Step 2Stir in mushrooms and cook for another 15-30 minutes until onions are golden brown.

Step 3Add salt and pepper. Stir in the wine and raise heat to high; simmer until most of the wine has evaporated.

Step 4Add the heavy cream; simmer and stir for a few minutes until thickened. Stir in parsley remove from heat. Serve over prepared pasta of choice.
