carmelized onions & mushrooms pasta

If you love sauteed onions and mushrooms, you'll love this! Since recently becoming a vegetarian, I am discovering so many ways to serve pasta. This is one the whole family loves!

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 large onions, sliced very thin (i always use vidalia but use what you like)
  • - salt and pepper, to taste
  • 1/2 cup white wine, dry
  • 1/2 cup parsley, finely chopped
  • 1/2 cup heavy cream
  • 1 pound pasta of choice, prepared to package directions
  • 4 ounces mini portabella mushrooms, fresh and sliced (any fresh mushroom will work)

How To Make carmelized onions & mushrooms pasta

  • Step 1
    In a large skillet, heat olive oil and butter over medium heat. Add the onions, turn the heat to low and cook, stirring occasionally, for 30 minutes.
  • Step 2
    Stir in mushrooms and cook for another 15-30 minutes until onions are golden brown.
  • Step 3
    Add salt and pepper. Stir in the wine and raise heat to high; simmer until most of the wine has evaporated.
  • Step 4
    Add the heavy cream; simmer and stir for a few minutes until thickened. Stir in parsley remove from heat. Serve over prepared pasta of choice.
