caprese pasta sauce - easy peasy, quick and easy
This is my take on classic Caprese sauce. When you come home from work late, or just don't feel like cooking a big meal, this really hits the spot. My family loves when I cook this dish. I hope your family enjoys it too.

Ingredients
- 16 - oz. box of thin spaghetti
- 8 - oz. mozzerella cheese, cut in small cubes
- 3 - tbsp. oil
- 1 - tsp. garlic powder, more or less depending on taste
- 1 - tsp. italian seasoning
- 1/2 - tsp. salt, or to taste
- 1/2 - tsp. crushed red pepper flakes
- 1 - 28 oz. can of petite diced tomatoes, with juices
- 1/2 - cup white wine
- 1-1/2 - cups sliced black olives

Step 1Cook pasta to desired consistency, reserving 1 cup of the water for later, if needed.

Step 2In a large saucepan, combine all ingredients except cubed Mozzerella cheese. Simmer for 5 to 10 minutes.

Step 3Drain pasta, mix in sauce, and add Mozzerella cubes. Stir and mix well. Serve immediately. Use pasta water if too dry, but I doubt it will be.
