boneless skinless chicken breasts diced
8 oz
andouille sausage sliced
4 clove
garlic minced
1 medium
onion chopped
1
red bell pepper sliced
1
yellow bell pepper sliced
2 c
mushrooms chopped
1 lb
angel hair pasta
5 c
chicken broth
1 c
heavy cream
2 c
shredded parmesan cheese
2 Tbsp
cajun seasoning divided
salt and pepper
thinly sliced chives for garnish

How to Make Cajun Pasta

Step-by-Step

  • 1Pour olive oil into a large pot. Add the diced chicken and cover it with one tbsp cajun seasoning. Stir until chicken is well coated. Add the sausage and cook about 5 minutes.
  • 2Add the garlic, onion, peppers and mushrooms. Stir and continue to cook about 5 more minutes.
  • 3Add the dry pasta to the pot then pour in the chicken broth. Mix well and cover and bring to a boil. Leave covered and reduce heat to a simmer and simmer 10 minutes. Until most of the moisture has been absorbed.
  • 4Add the heavy cream and parmesan cheese stir and cook until cheese melts. Stir in the remaining cajun seasoning and salt and pepper to taste. Garnish with chives.
