Cajun Pasta
Ingredients

2boneless skinless chicken breasts diced

8 ozandouille sausage sliced

4 clovegarlic minced

1 mediumonion chopped

1red bell pepper sliced

1yellow bell pepper sliced

2 cmushrooms chopped

1 lbangel hair pasta
-
5 cchicken broth
-
1 cheavy cream
-
2 cshredded parmesan cheese
-
2 Tbspcajun seasoning divided

·salt and pepper

·thinly sliced chives for garnish
How to Make Cajun Pasta
- Pour olive oil into a large pot. Add the diced chicken and cover it with one tbsp cajun seasoning. Stir until chicken is well coated. Add the sausage and cook about 5 minutes.
- Add the garlic, onion, peppers and mushrooms. Stir and continue to cook about 5 more minutes.
- Add the dry pasta to the pot then pour in the chicken broth. Mix well and cover and bring to a boil. Leave covered and reduce heat to a simmer and simmer 10 minutes. Until most of the moisture has been absorbed.
- Add the heavy cream and parmesan cheese stir and cook until cheese melts. Stir in the remaining cajun seasoning and salt and pepper to taste. Garnish with chives.
