Ingredients
- 2 tablespoons olive oil
- 2 - boneless skinless chicken breasts diced
- 8 ounces andouille sausage sliced
- 4 cloves garlic minced
- 1 medium onion chopped
- 1 - red bell pepper sliced
- 1 - yellow bell pepper sliced
- 2 cups mushrooms chopped
- 1 pound angel hair pasta
- 5 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded parmesan cheese
- 2 tablespoons cajun seasoning divided
- - salt and pepper
- - thinly sliced chives for garnish
How To Make cajun pasta

Step 1Pour olive oil into a large pot. Add the diced chicken and cover it with one tbsp cajun seasoning. Stir until chicken is well coated. Add the sausage and cook about 5 minutes.

Step 2Add the garlic, onion, peppers and mushrooms. Stir and continue to cook about 5 more minutes.

Step 3Add the dry pasta to the pot then pour in the chicken broth. Mix well and cover and bring to a boil. Leave covered and reduce heat to a simmer and simmer 10 minutes. Until most of the moisture has been absorbed.

Step 4Add the heavy cream and parmesan cheese stir and cook until cheese melts. Stir in the remaining cajun seasoning and salt and pepper to taste. Garnish with chives.
