Ingredients
- 2 tablespoons olive oil
- 4 cloves garlic minced
- 1 cup ground sausage or cooked sausage cut into rings
- 2 boneless chicken thighs thinly sliced
- 1 tablespoon cajun seasoning
- 2 cups heavy cream
- 1 cup grated parmesan cheese
- 1 cup mascarpone cheese
- 4 cups penne pasta cooked
- 1/4 cup fresh parsley chopped

Step 1Cook the penne pasta in salted boiling water. Drain. Reserve 1/2 cup pasta water

Step 2Add the olive oil to a pan. Add the sausage, chicken and garlic. Cook until chicken is no longer pink. Drain the grease and sprinkle with the Cajun seasoning.

Step 3Add the heavy cream, Parmesan cheese, and Mascarpone cheese and cook until the cheese is melted. Add the Penne pasta and pasta water. Cook until thickened. Add the parsley and stir. Season with salt and Pepper
