burger noodle stuff
We never came up with a name for it but we know what we want when we say Burger Noodle Stuff. This recipe is a bit of a cross between a thick soup and a casserole and it came about a long time ago when I was scrounging the pantry for something to make. It turned out tasty and we've tweaked it a bit over the years. I just recently pulled it out of hibernation and decided to make it again - it's still good ! Prepared the way the recipe is written, we serve it in bowls and the noodles tend to soak up the liquid. For more of a soup add more tomato sauce or more broth.

Ingredients
- 1/2 cup dry pasta - shells, elbow, bow ties etc
- 1/2 pound lean ground beef
- 1/4 cup chopped onion
- 1/8 cup finely chopped celery
- 1/4 cup chopped carrots
- 1/4 cup chopped green bell pepper
- 1/8 cup chopped red bell pepper
- 1 teaspoon minced garlic - more to taste
- pinch red pepper flakes - amount is to taste
- 2 cans 8 oz ea tomato sauce or 16 oz can chopped tomatoes
- 1/4 - 1/2 cup chicken or beef broth
- 1 teaspoon italian seasoning
- 1/2 cup whole kernel corn - fresh or well drained canned - crisp variety
- salt and pepper to taste
- garnishes - sour cream, shredded mozzarella, snipped chives
How To Make burger noodle stuff

Step 1Cook the pasta to the al dente stage then drain and rinse and set aside.

Step 2Place the ground beef, onion, celery, carrots, bell pepper into a large pot and cook until meat is done and vegies are tender. Add remaining ingredients including cooked pasta and stir to mix. Cover and simmer for 5 minutes then serve.

Step 3Serve hot with a dollop of sour cream, a bit of shredded mozzarella cheese or a sprinkling of snipped chives.
