I cook up a lot of pasta at a time and freeze it in serving sizes - usually about 2 cups per baggie. This makes it easy to prep a sauce or veggies to saute with it.

Ingredients

  • 2 cups cooked pasta (i like angel hair)
  • 1 cup raw broccoli, chopped
  • 1/2 cup roma tomato, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon crushed red pepper
  • 1 clove garlic
  • 1 pinch oregano (to taste)
  • 1 pinch salt

How To Make broccoli, roma tomato & angel hair pasta

  • Step 1
    Cook pasta - generally best texture is to cook 12 minutes after boil.
  • Step 2
    In a fry pan saute garlic and broccoli in olive oil until broccoli is tender crisp.
  • Step 3
    Add tomatoes to the fry pan. Sweat tomatoes until they are soft but not mushy.
  • Step 4
    Add salt, oregano and red pepper. Mix.
  • Step 5
    Add drained pasta to fry pan and toss with vegetables.
  • Step 6
    Serve with grated cheese.
