Ingredients
- - 4 tomatoes, cut into 1/2 inch cubes
- - 1 lb. brie cheese, rind removed and cheese torn into irregular pieces
- - 1 cup fresh basil leaves, cut into strips (chiffonade)
- - 3 garlic cloves, finely minced
- - 1 cup olive oil
- - 1/2 tsp. salt
- - 1/2 tsp. pepper
- - 6 quarts water
- - 1 1/2 lbs. linguini
- - 1 tbsp. olive oil
- - 2 tsp. salt
- - pepper to taste
- - freshly grated parmesan cheese
How To Make brie and basil linguini

Step 1Mix tomatoes, Brie cheese, basil, garlic, 1 cup olive oil, 1/2 tsp. salt and 1/2 tsp.pepper in a large serving bowl. Let stand, covered, at room temperature for at least 1 hours.

Step 2Bring water to a boil in large stockpot. Add linguini, 1 Tbsp. olive oil and the remaining 2 tsp. salt. Cook for 8 to 10 minutes, and drain. Add pasta, pepper to taste and Parmesan cheese to the tomato mixture and toss to mix. Serves 4
