Ingredients

  • - 4 tomatoes, cut into 1/2 inch cubes
  • - 1 lb. brie cheese, rind removed and cheese torn into irregular pieces
  • - 1 cup fresh basil leaves, cut into strips (chiffonade)
  • - 3 garlic cloves, finely minced
  • - 1 cup olive oil
  • - 1/2 tsp. salt
  • - 1/2 tsp. pepper
  • - 6 quarts water
  • - 1 1/2 lbs. linguini
  • - 1 tbsp. olive oil
  • - 2 tsp. salt
  • - pepper to taste
  • - freshly grated parmesan cheese

How To Make brie and basil linguini

  • Step 1
    Mix tomatoes, Brie cheese, basil, garlic, 1 cup olive oil, 1/2 tsp. salt and 1/2 tsp.pepper in a large serving bowl. Let stand, covered, at room temperature for at least 1 hours.
  • Step 2
    Bring water to a boil in large stockpot. Add linguini, 1 Tbsp. olive oil and the remaining 2 tsp. salt. Cook for 8 to 10 minutes, and drain. Add pasta, pepper to taste and Parmesan cheese to the tomato mixture and toss to mix. Serves 4
