Rich, flavourful and ready in less than 20 minutes. A weeknight winner! Defrosted frozen prawns work a treat for this recipe. The rich flavour comes from the tomato pesto. Enjoy with a big tossed salad.

Ingredients

  • 8 ounces spaghetti
  • 1/2 pound bacon, diced
  • 2 tablespoons store bought tomato pesto
  • 1 tablespoon minced garlic
  • 1/2 cup chopped sun dried tomatoes in oil
  • 1 1/2 pounds peeled prawns, tails intact
  • 1 - 1.5 cups evaporated milk or light pouring cream
  • 2 cups well packed baby spinach, washed
  • 1 tablespoon butter, salted
  • chili flakes, to garnish, optional
  • grated Parmesan cheese, to garnish, optional

How To Make betty's creamy tuscan prawns with garlic & spinach

  • Step 1
    Boil water and get the spaghetti cooking - this sauce won't take long.
  • Step 2
    In a deep skillet, cook the bacon to your liking. Add the pesto, garlic and sun dried tomatoes. Cook until fragrant. Add the prawns and milk/cream and cook until the prawns are cooked through. Add the spinach and turn off the heat to wilt. Add the butter and allow to melt; stir through.
  • Step 3
    Pour the sauce over the cooked spaghetti and top with a little chili flakes and/or Parmesan.
