Ingredients

  • 2 c
    macaroni, elbow
  • 4
    slices bacon
  • 1/2 c
    sour cream
  • 1
    egg
  • 2/3 c
    pale beer
  • 1 1/2 c
    cheese, freshly grated
  • 2 Tbsp
    butter
  • 1/2 tsp
    pepper
  • 1/4 tsp
    paprika
  • ·
    pinch cayene
  • ·
    salt to taste

How to Make Beer Mac and Cheese

Step-by-Step

  1. Sautee bacon until crisp. While waiting for a large pot of salted water to boil.
  2. Once water is boiling, add the noodles and cook until just before done about 6 to 8 minutes. Don't over-cook the noodles or this will end up mushy. Drain pasta and pour back into large pot.
  3. In a separate sauce pan, add the beer, egg and sour cream, beat until well combined. Heat on medium heat - add butter. Stir until the butter has melted.
    About 1/4 a cup at a time, add the cheese. Stir until cheese has melted before adding more.
    Add the spices and chopped bacon, stir. Pour over pasta and stir to combine.
  4. NOTE - I usually start step 3 after bacon is finished and still waiting for water to boil.
