Beer Mac and Cheese

2 cmacaroni, elbow

4slices bacon
-
1/2 csour cream
-
1egg
-
2/3 cpale beer
-
1 1/2 ccheese, freshly grated
-
2 Tbspbutter
-
1/2 tsppepper
-
1/4 tsppaprika
-
·pinch cayene
-
·salt to taste
How to Make Beer Mac and Cheese
- Sautee bacon until crisp. While waiting for a large pot of salted water to boil.
- Once water is boiling, add the noodles and cook until just before done about 6 to 8 minutes. Don't over-cook the noodles or this will end up mushy. Drain pasta and pour back into large pot.
- In a separate sauce pan, add the beer, egg and sour cream, beat until well combined. Heat on medium heat - add butter. Stir until the butter has melted.
About 1/4 a cup at a time, add the cheese. Stir until cheese has melted before adding more.
Add the spices and chopped bacon, stir. Pour over pasta and stir to combine. - NOTE - I usually start step 3 after bacon is finished and still waiting for water to boil.
