Ingredients
- 2 cups macaroni, elbow
- 4 - slices bacon
- 1/2 cup sour cream
- 1 - egg
- 2/3 cup pale beer
- 1 1/2 cups cheese, freshly grated
- 2 tablespoons butter
- 1/2 teaspoon pepper
- 1/4 teaspoon paprika
- - pinch cayene
- - salt to taste
How To Make beer mac and cheese

Step 1Sautee bacon until crisp. While waiting for a large pot of salted water to boil.

Step 2Once water is boiling, add the noodles and cook until just before done about 6 to 8 minutes. Don't over-cook the noodles or this will end up mushy. Drain pasta and pour back into large pot.

Step 3In a separate sauce pan, add the beer, egg and sour cream, beat until well combined. Heat on medium heat - add butter. Stir until the butter has melted. About 1/4 a cup at a time, add the cheese. Stir until cheese has melted before adding more. Add the spices and chopped bacon, stir. Pour over pasta and stir to combine.

Step 4NOTE - I usually start step 3 after bacon is finished and still waiting for water to boil.
