beer mac and cheese

If there are any leftovers - this recipe makes terrific fried mac n cheese snacks.

Ingredients

  • 2 cups macaroni, elbow
  • 4 - slices bacon
  • 1/2 cup sour cream
  • 1 - egg
  • 2/3 cup pale beer
  • 1 1/2 cups cheese, freshly grated
  • 2 tablespoons butter
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika
  • - pinch cayene
  • - salt to taste

How To Make beer mac and cheese

  • Step 1
    Sautee bacon until crisp. While waiting for a large pot of salted water to boil.
  • Step 2
    Once water is boiling, add the noodles and cook until just before done about 6 to 8 minutes. Don't over-cook the noodles or this will end up mushy. Drain pasta and pour back into large pot.
  • Step 3
    In a separate sauce pan, add the beer, egg and sour cream, beat until well combined. Heat on medium heat - add butter. Stir until the butter has melted. About 1/4 a cup at a time, add the cheese. Stir until cheese has melted before adding more. Add the spices and chopped bacon, stir. Pour over pasta and stir to combine.
  • Step 4
    NOTE - I usually start step 3 after bacon is finished and still waiting for water to boil.
