beefy macaroni & tomatoes

This is a dish that my mother made when she needed to fix something quick or just because we liked it so well.

Ingredients

  • 1 package large elbow macaroni or any pasta 8-12 oz
  • 1 pound ground chuck
  • 1 can diced tomatoes
  • 1-2 can tomato sauce 8 oz
  • 1/4-1/2 teaspoon oregano leaves, optional
  • - salt and pepper to taste
  • 1 cup cheddar cheese, shredded

How To Make beefy macaroni & tomatoes

  • Step 1
    In saucepan cook macaroni per package directions. Basically, bring salted water to boil; add macaroni and cook until tender about 7-10 minutes. Drain.
  • Step 2
    In the meantime, brown ground chuck that has been seasoned with salt and pepper. Cook until done then drain. Note: I use a large iron skillet.

    Step 3
    Add the tomatoes and tomato sauce to ground beef Add oregano leaves, if desired. Stir in cooked macaroni and let simmer about 20 minutes. Stirring occasionally. Remove from heat and top with shredded cheese.
