baked macaroni with bacon medley
I created a new baked macaroni recipe with the first-ever bacon medley (bacon pieces, diced red and yellow bell peppers, and chopped purple onion).

Ingredients
- 1 cup cubed processed american cheese
- 16 ounces dry elbow macaroni
- 1 tablespoon olive oil
- 1 pound thick sliced bacon, cut into 1/2-inch pieces
- 1 medium red bell pepper, diced
- 1 medium yellow bell pepper, diced
- 1 medium purple onion, peeled and chopped
- 1 tablespoon sweet and tangy seasoning
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 2 teaspoons ground black pepper
- 2 tablespoons margarine
- 1 cup heavy cream
- 1 can evaporated milk
- 8 ounces cream cheese, softened
- 8 ounces colby jack cheese, shredded
- 8 ounces extra sharp cheddar cheese, shredded
How To Make baked macaroni with bacon medley

Step 1Preheat oven to 350 degrees F.

Step 2Coat the bottom and sides of a 10x15-inch baking dish with cooking spray. Add cubed American cheese.

Step 3Fill a pot with lightly salted water, bring to a boil over medium-high heat, stir in the macaroni, and return to a boil. Cook, stirring occasionally, until the macaroni has cooked through but is still firm to the bite, about 8 minutes. Drain well.

Step 4Heat olive oil in a large, deep skillet over medium heat. Add raw bacon pieces, diced red and yellow peppers, and chopped purple onion. Cook and saute for 6 minutes or until the bacon pieces are brown and crispy and the vegetables are tender.

Step 5Remove from heat. Season with sweet and tangy seasoning, ground cumin, garlic powder, and black pepper. Set aside.

Step 6Heat margarine in a medium saucepan over medium heat. Add heavy cream, evaporated milk, cream cheese, and half of the shredded Colby Jack and extra sharp cheddar cheeses. Stir well and bring it to a boil for 5 minutes until thickened.

Step 7Add cooked macaroni and bacon medley; mix well for 3 minutes until blended. Remove from heat.

Step 8Pour over a prepared baking dish and spread evenly with a rubber spatula. Sprinkle with remaining shredded cheeses.

Step 9Bake for 30 minutes or until the cheese is melted. Cool completely for 8 minutes.
