I created a new baked macaroni recipe with the first-ever bacon medley (bacon pieces, diced red and yellow bell peppers, and chopped purple onion).

Ingredients

  • 1 cup cubed processed american cheese
  • 16 ounces dry elbow macaroni
  • 1 tablespoon olive oil
  • 1 pound thick sliced bacon, cut into 1/2-inch pieces
  • 1 medium red bell pepper, diced
  • 1 medium yellow bell pepper, diced
  • 1 medium purple onion, peeled and chopped
  • 1 tablespoon sweet and tangy seasoning
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons ground black pepper
  • 2 tablespoons margarine
  • 1 cup heavy cream
  • 1 can evaporated milk
  • 8 ounces cream cheese, softened
  • 8 ounces colby jack cheese, shredded
  • 8 ounces extra sharp cheddar cheese, shredded

How To Make baked macaroni with bacon medley

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Coat the bottom and sides of a 10x15-inch baking dish with cooking spray. Add cubed American cheese.
  • Step 3
    Fill a pot with lightly salted water, bring to a boil over medium-high heat, stir in the macaroni, and return to a boil. Cook, stirring occasionally, until the macaroni has cooked through but is still firm to the bite, about 8 minutes. Drain well.
  • Step 4
    Heat olive oil in a large, deep skillet over medium heat. Add raw bacon pieces, diced red and yellow peppers, and chopped purple onion. Cook and saute for 6 minutes or until the bacon pieces are brown and crispy and the vegetables are tender.
  • Step 5
    Remove from heat. Season with sweet and tangy seasoning, ground cumin, garlic powder, and black pepper. Set aside.
  • Step 6
    Heat margarine in a medium saucepan over medium heat. Add heavy cream, evaporated milk, cream cheese, and half of the shredded Colby Jack and extra sharp cheddar cheeses. Stir well and bring it to a boil for 5 minutes until thickened.
  • Step 7
    Add cooked macaroni and bacon medley; mix well for 3 minutes until blended. Remove from heat.
  • Step 8
    Pour over a prepared baking dish and spread evenly with a rubber spatula. Sprinkle with remaining shredded cheeses.
  • Step 9
    Bake for 30 minutes or until the cheese is melted. Cool completely for 8 minutes.
