bahamian macaroni and cheese

I like to have this style of mac and cheese sometimes. Bahamian mac and cheese always uses evaporated milk and is baked. From Gourmet Bahamian Cooking.

Ingredients

  • 8 ounces elbow macaroni, cooked and drained
  • 1 tablespoon onion, finely chopped (i add more)
  • 1 tablespoon green pepper, finely chopped (i add more)
  • 1 tablespoon celery, finely chopped
  • 6 ounces cheddar cheese, shredded
  • 1 dash pepper
  • 1 12-oz cans evaporated milk
  • 2 dashes hot pepper sauce, to taste
  • 1 - egg, lightly beaten, optional

How To Make bahamian macaroni and cheese

  • Step 1
    Add the onion, green pepper and celery to the macaroni; stir.
  • Step 2
    Add one-half of the cheese and stir over low heat until melted.
  • Step 3
    Season and stir in evaporated milk.
  • Step 4
    Spoon into a well-greased 8x8x2-inch baking pan and sprinkle remaining cheese evenly on top.
  • Step 5
    Bake in a pre-heated oven at 350F for 20 minutes.
  • Step 6
    Let stand for 10 min and cut into squares to serve.
