I like to have this style of mac and cheese sometimes. Bahamian mac and cheese always uses evaporated milk and is baked.

  • 8 oz
    elbow macaroni, cooked and drained
  • 1 Tbsp
    onion, finely chopped (i add more)
  • 1 Tbsp
    green pepper, finely chopped (i add more)
  • 1 Tbsp
    celery, finely chopped
  • 6 oz
    cheddar cheese, shredded
  • 1 dash(es)
  • 1 12-oz can(s)
    evaporated milk
  • 2 dash(es)
    hot pepper sauce, to taste
  • 1
    egg, lightly beaten, optional

How to Make Bahamian Macaroni and Cheese


  1. Add the onion, green pepper and celery to the macaroni; stir.
  2. Add one-half of the cheese and stir over low heat until melted.
  3. Season and stir in evaporated milk.
  4. Spoon into a well-greased 8x8x2-inch baking pan and sprinkle remaining cheese evenly on top.
  5. Bake in a pre-heated oven at 350F for 20
  6. Let stand for 10 min and cut into squares to serve.
