As mom i feel like it's my job to keep the menu interesting.. so I create things. Some not so successful, others a real hit. This one is a real hit w/ them n' extended family.

Makes 9x13 pan
Ingredients
- 1 1/2 pounds bacon
- 1 box velveeta mac n' cheese (family size)
- 6 - potatoes, medium
- 3 cups shredded pizza blend cheese
- 1/2 to 3/4 cups italalian bread crumbs
- 2 tablespoons minced onions
- 2 tablespoons milk
- dash salt
How To Make bacon casserole

Step 1cut up bacon n' fry lightly (reserve bacon grease)

Step 2cook velveeta per box instructions

Step 3peel, cube, n'cook potatoes (do not over cook)Add: salt n' minced onions to your potatoes when cooking

Step 4mix bacon, veveeta, n' potatoes together

Step 5mix in 1-2 Tlbs. of bacon grease (for better flavor)

Step 6add 2 Tlbs. milk

Step 7pour 1/2 of mixture in a 9x13 pan

Step 8add a layer of cheese

Step 9pour second 1/2 of mixture in pan

Step 10layer of cheese on top

Step 11lightly cover entire top w/ bread crumbs

Step 12bake @ 400 until bread crumbs are a medium brown
