As mom i feel like it's my job to keep the menu interesting.. so I create things. Some not so successful, others a real hit. This one is a real hit w/ them n' extended family.

Ingredients For bacon casserole

  • 1 1/2 lb
    bacon
  • 1 box
    velveeta mac n' cheese (family size)
  • 6
    potatoes, medium
  • 3 c
    shredded pizza blend cheese
  • 1/2 to 3/4 c
    italalian bread crumbs
  • 2 Tbsp
    minced onions
  • 2 Tbsp
    milk
  • dash
    salt

How To Make bacon casserole

  • 1
    cut up bacon n' fry lightly (reserve bacon grease)
  • 2
    cook velveeta per box instructions
  • 3
    peel, cube, n'cook potatoes (do not over cook)Add: salt n' minced onions to your potatoes when cooking

    mix bacon, veveeta, n' potatoes together
  • 5
    mix in 1-2 Tlbs. of bacon grease (for better flavor)

    add 2 Tlbs. milk
  • 7
    pour 1/2 of mixture in a 9x13 pan
  • 8
    add a layer of cheese
  • 9
    pour second 1/2 of mixture in pan
  • 10
    layer of cheese on top
  • 11
    lightly cover entire top w/ bread crumbs

    bake @ 400 until bread crumbs are a medium brown
