bacon bow tie pasta (with veggies)

I made this with fresh squash one summer. its so delicious and a lighter alternative to heavily sauced pastas. you could make this your own by adding other ingredients too.

Ingredients

  • 1 box bow tie pasta
  • 1 bag cheese, shredded parmesan
  • 1 large zucchini
  • 1 large yellow squash
  • 10 slices bacon
  • 2 tablespoons olive oil, extra virgin
  • 2 teaspoons oregano, dried
  • 2 - garlic, whole cloves, crushed
  • 1 cup onion, chopped

How To Make bacon bow tie pasta (with veggies)

  • Step 1
    cook noodles to al dente, drain, but reserve the liquid
  • Step 2
    cook bacon strips, drain, and chop. set aside to the drippings, add garlic, chopped onion, sautee lightly
  • Step 3
    add zuccini and squash to the onion/garlic mix and sautee al dente. add salt and pepper to taste, and a pinch of nutmeg too
  • Step 4
    to a large serving bowl, transfer noodles, add the olive oil, parmesan cheese, oregano, and 1/2 cup of reserved water. stir. you can add more water if you want.
  • Step 5
    add the veggies, add the bacon. voila! top with more cheese and serve
