Bacon Bow Tie pasta (with veggies)

I made this with fresh squash one summer. its so delicious and a lighter alternative to heavily sauced pastas. you could make this your own by adding other ingredients too.

bow tie pasta
1 bag(s)
cheese, shredded parmesan
1 large
1 large
yellow squash
10 slice
2 Tbsp
olive oil, extra virgin
2 tsp
oregano, dried
garlic, whole cloves, crushed
1 c
onion, chopped


1cook noodles to al dente, drain, but reserve the liquid
2cook bacon strips, drain, and chop. set aside
to the drippings, add garlic, chopped onion, sautee lightly
3add zuccini and squash to the onion/garlic mix and sautee al dente.
add salt and pepper to taste, and a pinch of nutmeg too
4to a large serving bowl, transfer noodles,
add the olive oil, parmesan cheese, oregano, and 1/2 cup of reserved water. stir. you can add more water if you want.
5add the veggies, add the bacon. voila!
top with more cheese and serve
