bacon bow tie pasta (with veggies)

I made this with fresh squash one summer. its so delicious and a lighter alternative to heavily sauced pastas. you could make this your own by adding other ingredients too.

Ingredients
- 1 box bow tie pasta
- 1 bag cheese, shredded parmesan
- 1 large zucchini
- 1 large yellow squash
- 10 slices bacon
- 2 tablespoons olive oil, extra virgin
- 2 teaspoons oregano, dried
- 2 - garlic, whole cloves, crushed
- 1 cup onion, chopped
How To Make bacon bow tie pasta (with veggies)

Step 1cook noodles to al dente, drain, but reserve the liquid

Step 2cook bacon strips, drain, and chop. set aside to the drippings, add garlic, chopped onion, sautee lightly

Step 3add zuccini and squash to the onion/garlic mix and sautee al dente. add salt and pepper to taste, and a pinch of nutmeg too

Step 4to a large serving bowl, transfer noodles, add the olive oil, parmesan cheese, oregano, and 1/2 cup of reserved water. stir. you can add more water if you want.

Step 5add the veggies, add the bacon. voila! top with more cheese and serve
